Lamb and Beef Meatloaf

  • 1 tbsp. coconut oil
  • 1/2 cup riced cauliflower
  • 1/2 zucchini, peeled and grated
  • 1 carrot, peeled and grated
  • 2 stalks of celery, sliced
  • 1/2 onion, diced
  • 1 tsp. garlic powder
  • 1 tsp. dried thyme
  • 1/2 tsp. dried rosemary
  • 1 tsp. dried parsley
  • 2 eggs
  • 1 lb ground lamb
  • 1 lb ground beef


  1. In a large skillet on medium heat, melt the coconut oil and cook he onion, zucchini, carrot, celery, and cauliflower rice for about 6 minutes. Set aside to cool.
  2. Preheat the oven to 350 F.
  3. In a large bowl add the garlic powder, thyme, rosemary, parsley and eggs. Whisk together until combined then add in the meat and cooled veggies. Mix with hands until incorporated.
  4. Transfer the mixture to a 9 x 5 loaf pan, and spread evenly. Bake for 45-50 minutes or until the internal temperature is 155, then pour off the liquid in the loaf pan.
  5. Put the loaf back into the oven for another 10 minutes. Allow to cool before slicing.
