Servings: 2-4

  • 4 medium japanese white sweet potatoes or sweet potatoes, peeled
  • 1 tbsp coconut oil, avocado oil or ghee, melted
  • Salt

  • 1 small onion, diced
  • 1 lb ground beef
  • 4 cloves garlic, minced
  • 2 tsps dried oregano
  • 2 tsps dried basil
  • 1 tsp salt

  • 1 avocado, diced
  • 2 tbsps fresh chives, minced
  • ½ cup shredded butter lettuce

  1. Preheat oven to 410 F. Line 2 large baking sheets with parchment paper and set aside. Peel potatoes and slice into fry shape. Place fries in large bowl and toss with oil and salt. Place fries onto baking sheets in one layer. Make sure that the fries are not overlapping or touching, this will help them crisp up. Bake fries for 20 minutes, then pull out of oven and flip over eat fry. Change baking sheet location in oven (top to bottom, bottom to top) and rotate baking sheets 180 degrees for even baking. Bake for an additional 10-20 minutes, depending on how crispy you like them and how thick they are.
  2. Meanwhile cook the beef on medium in a large skillet then add onion, garlic and seasonings. Cook until onions are soft and flavors are well blended.
  3. Once fries are done; divide servings onto plates or in large bowls. Top with beef and desired toppings. Use a fork to eat with or use hands! Have fun, these are delicious!
