Sweet Potato Breakfast Hash
Servings: 1-2
Ingredients
- 1 tbsp coconut oil
- 1 lb ground beef
- 1 medium sweet potato, peeled and diced
- 6 ounces of spinach
- 1/2 avocado, sliced
- 1/2 tsp garlic powder
- 1/2 tsp salt
- 1/2 tsp dried thyme
- Oregano for garnish
Instructions
- Heat oil in a medium skillet on medium and add sweet potatoes. Stir frequently and cook until slightly browned and softened.
- In a separate skillet crumble and cook the beef until browned. Add the garlic powder, salt, and thyme stirring together. Turn the heat to low and add the sweet potato and spinach. Cook until spinach is wilted.
- Plate and top with avocado and enjoy!
