Slow Cooker Roast {AIP}

Servings: 8-10


  • 1 4-5 lb roast {I used beef but you could also use pork}
  • 1 yellow onion, sliced
  • 4 carrots, chopped or sliced
  • 1 large sweet potato, peeled and cubed
  • 3 celery heart stalks, chopped
  • 2 bay leaves
  • 4 cloves of garlic, minced
  • 1 cup broth or stock
  • 1/2 tsp salt
  • 1/2 tsp dried thyme
  • 1/4 tsp dried ginger
  • 1/2 tsp dried garlic powder
  • 1/2 tsp onion powder


On medium to high heat in a large skillet, sear the roast on all sides until it has a nice browned outside. Then sprinkle salt, dried thyme, ginger, garlic and onion powder onto roast. Place roast in slow cooker and surround and top with veggies. Add bay leaves and broth. Slow cook low 8-10 hours. Add more salt of needed and enjoy!
