Plantain Nachos {AIP}

  • 2 plantains, chopped into coins
  • 1/4 cup coconut oil or oil of choice
  • 2 cups cooked pork shoulder
  • 1 avocado, sliced
  • 1 cup romaine lettuce, chopped
  • Salt
  • Juice of 1 lime
  • Parsley for garnish


Heat the coconut oil in a medium skillet on medium heat, fry the plantain coins for about 3 minutes each side, then remove from skillet. Slightly flatten the plantains with the spatula on parchment paper. Place the flattened plantain coins back in the skillet and fry for about 1 minute each side until golden brown, then remove from skillet and place on a paper towel to cool.

Divide the plantains between two plates and lay flat. Top with the romaine lettuce, shredded pork shoulder, and avocado. Squeeze on the lime juice then sprinkle on the salt and parsley. Enjoy!
