AIP friendly “coffee” yes! I don’t necessarily enjoy coffee for the coffee bean flavor, but I do miss my warm drink or afternoon pick me up. I like my coffee with a ton of flavor and cream. This recipe can be adjusted to your taste, with more or less cream or sweetener. I hope you enjoy and it helps your AIP journey.
I used just a sprinkle of cinnamon and ginger for flavor. The coconut oil increases the fat content and gives a boost of sustainable energy. The collagen is great for skin, hair and nails, and helps the coffee to be frothy. The maple syrup and carob are for flavor and can be omitted.
To get a view of the servings size, this is my tumbler filled all the way to the top, with the entire batch. My small white mugs, I could probably have 2.5 maybe 3 cups filled. Hope this helps!
- 2 cups filtered water
- 1 tea bag of dandelion root
- 1 tea bag of black tea
- 1/2 cup coconut milk, full-fat
- 1 tbsp collagen
- 1 tbsp coconut oil
- 1/4 tsp cinnamon or less
- 1/4 tsp ground ginger
- 1/2 tsp carob powder
- 1 tbsp maple syrup
Bring water to a boil in a small sauce pan. Add tea bags and allow to steep for about 5 minutes. Meanwhile, combine all other ingredients in a blender, then add in the the tea from the sauce pan. *Be careful* when blending hot liquids. I put the lid on my blender and leave the small circular piece out and hold a towel over the top so that pressure can escape the lid, without blowing off!
