Ham and Pineapple Pizza {AIP}

Servings: 2-3

Ingredients

Crust

  • ⅔ cup arrowroot flour
  • ¼ cup + 2 tbsp coconut flour
  • ½ tsp baking soda
  • ¼ tsp sea salt
  • 2 tbsp Olive oil
  • ½ cup Warm water
  • 1/2 tsp dried oregano
  • 1/2 tsp dried basil
  • 1/2 tsp garlic powder

Sauce

  • 1 tbs coconut oil
  • 4 cloves garlic, minced
  • 1 cup canned, full fat coconut milk
  • 1 1/2 tbsp arrowroot flour
  • 1/4 tsp sea salt
  • 1/2 tsp died oregano

Toppings

  • 8 ounces of cubed ham
  • 1/2 cup pineapple, diced

Instructions

For the flatbread crust

  1.  Preheat the oven to 425 degrees F and line a baking sheet or pizza pan with parchment paper.
  2. In a medium sized mixing bowl Whisk together the dry ingredients. Slowly pour in the olive oil, stirring as you pour. Mix in the warm water thoroughly until a smooth ball of dough has formed.
  3. Place dough on a pizza pan or baking sheet. Optional: Lay another sheet of parchment on top of the dough. Use hands or a rolling pin to smooth the dough into a circle about ¼ inch thick and approximately 10 inches wide.
  4. Bake for 12 minutes until crispy. Set aside while you make your sauce.

Sauce

  1. Heat coconut oil in a small sauce pan on low heat. Add in the garlic and cook for about 1 minute.
  2. Add 3/4 cup coconut milk to the pan. Measure an additional 1/4 cup of coconut milk and place into a small bowl. Whisk into the bowl the arrowroot flour until there are no lumps. Then whisk this mixture into the sauce pan.
  3. Add in the salt and oregano. Whisk until almost boiling, the sauce should be thick and creamy.

Assembly

  1. Spread the sauce onto the crust and then sprinkle with ham and pineapple.
  2. Return to oven and bake for about 5 minutes or so, until the sauce is bubbly. Let the pizza cool for 5 minutes before serving.
