Kale Breakfast Hash {AIP}

Servings: 2


  • 3-4 cups kale
  • 1 sweet potato, peeled and diced
  • 1/2 small yellow onion, diced
  • 1 cup grass-fed beef, fully cooked
  • 1/4 tsp sea salt
  • 1 tbs cooking fat or oil; coconut, tallow, lard, etc.


  1. To a large skillet add the cooking oil and heat to medium. Add the sweet potatoes stirring occasionally, cook until softened, about 5-10 minutes. Then add the diced onion, stirring occasionally until softened.
  2. Lower the heat to medium low and add the beef and stir to combine, about 30 seconds. Then add the kale, adding more cooking fat if necessary. Cook, stirring often until the kale is wilted, about 5-8 minutes. Lastly, add in the salt and stir to combine. Serve and enjoy!

*This dish can also be topped with an egg, for non AIP; and/or add 1/4 tsp ground black pepper.

You can also customize this dish and add in different veggies or meats to make new flavors.
