Ham and Potato Soup {AIP}

YES AIP, you read that right! Ham and POTATO soup! This recipe uses japanese sweet potatoes rather than nightshades. I’m super excited to share this recipe with you guys and I hope you love it as much as I did.

I found japanese sweet potatoes at Whole Foods next to the sweet potatoes, yams, and white potatoes.

Ham and Potato soup {AIP}

Servings:

Ingredients

  • 1 tbsp coconut oil or fat of choice
  • 3 cups japanese sweet potato, peeled and diced
  • 2 carrots, chopped
  • 2 celery stalks, chopped
  • 6 cloves garlic, minced
  • 4 cups chicken broth
  • 1 tsp dried thyme
  • 1 tsp dried parsley
  • 2 cups cooked ham, diced 1/4 inch
  • 1/2 tsp salt

Instructions

  1. In a medium stock pot melt oil on medium heat, then add onion, celery and carrot. Saute until soft 5-7 minutes, stirring occasionally.
  2. Add garlic , stir and allow to cook for 1 minute.
  3. Then add potatoes, broth, thyme and parsley. Bring to a boil, then reduce to simmer until potatoes and carrots are tender, about 30 minutes.
  4. Using a potato masher, slightly smash the soup, breaking up the potatoes a little bit.
  5. Add ham and salt, heat to warm. Taste and season with more salt if needed. Enjoy!

Non-AIP

  • Add 1/4 tsp pepper, or red pepper flakes
  • Use potatoes of choice, 3 cups, if using red potatoes leave the skin on, otherwise peel and chop.
