Hamburger Soup {AIP}

This recipe is very easy and only takes about 30 minutes total to make. It is one of my most favorite soups I have ever made. I hope you enjoy!


I found Japanese white sweet potatoes at Whole Foods, next to sweet potatoes, yams and other potatoes are located.


Hamburger Soup {AIP}

Servings: 5-6


  • 1 tbsp coconut oil, or fat of choice
  • 1 medium yellow onion, diced
  • 1 lb ground beef
  • 2 cloves garlic, minced
  • 2 cups carrots, chopped
  • 4 cups beef broth
  • 1 tsp sea salt
  • 1/2 tsp dried thyme
  • 1 large white Japanese sweet potato, peeled and rough chopped


  1. In a medium pot or stock pot, on medium heat add the coconut oil. Once melted, add the diced onion and cook until translucent.
  2. Add the ground beef and break up with a spatula while cooking. Cook the beef until browned and broken up. Then add the garlic and cook 1-2 minutes more.
  3. Add the carrots, chopped potato, salt and broth to the pot and bring to a boil. Once boiling, reduce to a simmer and allow to cook for 20-30 minutes until the potatoes are soft and can easily be broken up.
  4. Using a potato masher, mash the potatoes in the soup into smaller pieces. Lastly add the dried thyme and stir to combine. Serve and enjoy!


  • Add 1/2 tsp of ground black pepper
  • Use any white potato(s) of choice
