In a pinch for breakfast or a sweet treat, this recipe is AIP compliant. Adding 1 cup almond milk and an extra date or two will make this recipe paleo and a thinner. Hope you enjoy!
- 1 can full-fat, coconut milk
- 2 pitted medjooled dates
- 2 tbsp organic honey
- 1 tsp vanilla extract
- 1 frozen banana
In a blender or food processor, blend the banana and dates on high for about 20 seconds. Add the coconut milk, honey, and vanilla extract, blend on high for 30 seconds. Serve immediately and enjoy!
Add: 1 cup almond milk, 1-2 more dates OR sub honey for 1/4 cup maple syrup.
