Peppermint Mocha Latte {Paleo, Vegan}

Servings: 4


  • 1- 14 oz can full-fat coconut milk
  • 1 cup almond milk, unsweetened
  • 1 tbsp unsweetened coco powder
  • 1/2 cup chocolate chips
  • 1/4 tsp peppermint extract
  • 1-2 cups brewed coffee


  1. Combine all ingredients in a saucepan over medium heat. Simmer for 5 minutes, whisking occasionally, until heated through.
  2. Carefully transfer the liquid to a blender  and cover the top with a towel. Blend on high for 30 seconds until foamy. Divide among 4 cups and enjoy!
