Cranberry Apple Chicken Salad {Paleo, GF, Whole30}


I loved this fresh crisp version of a chicken salad. The apples and cranberries add a nice sweet touch and the celery adds a little crunch. For a little more kick I added some salt and pepper. The chicken I used was from a whole chicken that I had cooked the previous day for the broth.


Cranberry Apple Chicken Salad {Paleo, GF, Whole30}

Servings: 1 medium or 2 small servings


  • 1 cup shredded cooked chicken
  • 1-2 tbsp mayo
  • 1/4 cup dried cranberries
  • 1/4 cup chopped celery
  • 1 small honey crisp apple cored and chopped
  • Salt and pepper to taste


In a small mixing bowl, combine chicken and mayo and mix until combined. Then fold in cranberries, celery, and the apple. Add salt and pepper to taste. Serve by itself or on top of paleo bread or crackers. Enjoy!
