This is the first time I have made scones, and they are my favorite that I have eaten so far. We had scones at our wedding, and they were okay. We also had scones for our last anniversary and they seemed super dry.
So I decided to try and make my own and I loved how moist these turned out. The orange zest gave it a really nice taste too. Hope you enjoy!
Cranberry Orange Scones {Paleo, Gluten Free}

Ingredients
- 2 cups almond flour
- 1 tsp baking soda
- 1/4 tsp salt
- 1 large egg, room temperature
- 1/4 cup coconut oil, melted
- 2 tbsp maple syrup
- Zest of one orange
- 1 tbsp orange juice
- 1/2 cup dried cranberries
Instructions
- Preheat the oven to 350 degrees
- In a small bowl, combine the almond flour, baking soda and salt
- In a large bowl, combine the egg, coconut oil, maple syrup, orange juice and orange zest. Add the dry ingredients to the wet and mix to form dough. Fold in the cranberries.
- Form the dough into a ball, then flatten it into a disk shape about 6 inches wide and 1/2 inch thick.
- Cut the disk into 8 triangular pieces and place them on a baking sheet lined with parchment paper. Bake for 10 minutes and allow to cool on pan.
