Cranberry Orange Scones {Paleo, Gluten Free}

This is the first time I have made scones, and they are my favorite that I have eaten so far. We had scones at our wedding, and they were okay. We also had scones for our last anniversary and they seemed super dry.

So I decided to try and make my own and I loved how moist these turned out. The orange zest gave it a really nice taste too. Hope you enjoy!

Cranberry Orange Scones {Paleo, Gluten Free}

Ingredients

  • 2 cups almond flour
  • 1 tsp baking soda
  • 1/4 tsp salt
  • 1 large egg, room temperature
  • 1/4 cup coconut oil, melted
  • 2 tbsp maple syrup
  • Zest of one orange
  • 1 tbsp orange juice
  • 1/2 cup dried cranberries

Instructions

  1. Preheat the oven to 350 degrees
  2. In a small bowl, combine the almond flour, baking soda and salt
  3. In a large bowl, combine the egg, coconut oil, maple syrup, orange juice and orange zest. Add the dry ingredients to the wet and mix to form dough. Fold in the cranberries.
  4. Form the dough into a ball, then flatten it into a disk shape about 6 inches wide and 1/2 inch thick.
  5. Cut the disk into 8 triangular pieces and place them on a baking sheet lined with parchment paper. Bake for 10 minutes and allow to cool on pan.
