Paleo Iced Coffee


Prior to going paleo, my coffee would be literally almost white from the amount of cream I would add for sweetness and flavor. I can’t stand black coffee! Cream and sweeteners pre-made from the store are LOADED with sugar and chemicals. On the right in the photo is my coconut milk mixed with some pumpkin spice. I came up with this recipe so I could actually have my coffee and enjoy it too. I hope you love it also!


I added some dates for a little sweetness, you could omit the dates or use raw honey or maple syrup. If using dates, be sure to blend on high until the dates are really small and mixed throughout.



Paleo Iced Coffee

Servings: 1


  • 1/2-1 cup chilled coffee
  • 1/3 cup coconut milk full-fat, blended
  • 1/2 tsp vanilla extract
  • 2 pitted dates
  • 5-10 ice cubes
  • Optional: add spices to your taste. For a pumpkin flavor add 1/4 tsp  of cinnamon, and 1/8 tsp of nutmeg, ginger, and/or cloves, all spice.


Place all ingredients in a blender and blend on HIGH for 3-4 minutes. Enjoy
