Blueberry Banana Nice Cream


Blueberry Banana Nice Cream:


  • 3 Frozen bananas
  • 1/4 cup blueberries
  • 1 pitted date
  • 1/2 tsp vanilla {avoid on AIP}
  • approx 1/4 cup coconut milk unsweetened
  • Carob powder {or unsweetened coco powder}


  1. Place frozen bananas in food processor along with date and vanilla. Process on high, pushing down the sides as needed.
  2. Continue processing and add in coconut milk; continue to push down food as needed. {add in more coconut milk if desired, more for a thinner nice cream texture}.
  3. Process frozen items until smooth and creamy, pushing down food as needed.
  4. Pour the nice cream into a bowl and place in freezer while preparing carob sauce.
  5. For the carob topping, mix 1 tbsp. of carob powder with 2 tbsp. of coconut milk, for a thinner sauce, add in more milk. For a thicker sauce, add more powder and less milk.
  6. Take the nice cream out of the freezer and top with blueberries and carob, enjoy!
