Sweet Potato Hash


This dish is super filling and savory, I made it the other morning for my hubby and I. It doesn’t have to be made with eggs, but why not? You can also add in some sun-dried tomatoes, which would be really good.


  • 4 slices of bacon
  • 1 large Sweet Potato cut into 1/2 inch cubes
  • 1/2 yellow onion, diced
  • Salt and Pepper to taste
  • 4 eggs
  • 1/4 cup fresh chopped basil


  1. Brown the bacon in a cast-iron skillet {which I don’t have a non-stick will work too} over medium-high heat, then stir in the sweet potatoes.
  2. Cover and let cook for about 5 minutes. remove the lid, and flip the sweet potatoes  continuing to cook without the lid for another 10 minutes until all sides are browned.
  3. Then add in onion, salt and pepper.
  4. Cook for another 5 minutes or until the onion are translucent, then create 4 wells in the hash and crackers the eggs into the wells. Cook eggs to preference.
  5. Before serving add the chopped basil.


Almost the last of my roses in the yard! Sad face.
