Cherry Nice Cream


Now that it has gotten a little chillier outside {and I’ve been too lazy to make it} I haven’t been eating nice cream that often, but it is still so yummy, I had to share a new recipe I tried. Both images are cherry nice cream, but have different toppings and a little different amounts of fruit added to them. With any nice cream recipe you can add or subtract whatever you want to make it your own.

Cherry Nice Cream:


  • 2 Frozen bananas
  • 1/2 cup cherries
  • 2-3 frozen strawberries
  • 1 pitted date
  • 1/2 tsp vanilla {avoid on AIP}
  • approx 1/4 cup coconut milk unsweetened
  • Unfrozen fruit for topping {optional}:bananas, cherries, raisins, coconut shreds, strawberries, blueberries, carob powder.

Directions: Place frozen bananas, cherries and strawberries in food processor along with date and vanilla.  Process on high, pushing down the sides as needed. Continue processing and add in coconut milk; continue to push down food as needed. {add in more coconut milk if desired, more for a thinner nice cream texture}. Process frozen items until smooth and creamy, pushing down food as needed. Pour the nice cream into a bowl and place in freezer while chopping toppings. Chop the unfrozen bananas and strawberries or desired fruit to top your nice cream. Take the nice cream out of the freezer and top with chopped fruit and enjoy.
