I just can’t stop eating nice cream, but it’s okay because it is so low calorie. Normally I would be filling up on regular dairy ice cream by the cartons, and also be gaining weight! On the Autoimmune Paleo Approach, I have really been missing my ice cream and something sweet but not the extra pounds, fatigue, joint pain and negative side affects. Nice cream has been my go to snack or breakfast this summer, so I wanted to share a yummy recipe!
Strawberry Banana Nice Cream:
3 Frozen Bananas, 1/2 cup Strawberries, 1 pitted date, 1/2 tsp vanilla, approx 1/4 cup Coconut Milk Unsweetened (I use Silk brand), Unfrozen bananas and strawberries for topping, 1 tsp of Carob powder.
Directions: Place frozen bananas and strawberries in food processor along with date and vanilla. Process and add in coconut milk and push down food as needed, adding more coconut milk if desired. While processing, in a separate small bowl add carob powder and 1 tbs of coconut milk and mix, if you desire a thinner topping add in more coconut milk, less for thicker. Process frozen items until smooth and creamy, pushing down food as needed. Pour the nice cream into a bowl and place in freezer while chopping toppings. Chop the unfrozen bananas and strawberries or desired fruit to top your nice cream. Take the nice cream out of the freezer and top with chopped fruit and carob topping. Enjoy!
